Pre-Spring Desserts

Greetings, Bobcats! Today I have found some desserts that will prepare you for the springtime! All of these recipes are very simple to make, and taste amazing! I hope that you will like at least one of them and make it soon!

The first dessert that I have found is a coconut-banana pudding. It takes about 2 hours and 30 minutes to make, and yields 16 cups of pudding. The base of the pudding includes egg yolks, sugar, flour, salt, half-and-half, butter, coconut extract, vanilla extract, and heavy cream. First, you want to mix the entire base together in a mixing bowl for 1 minute, or until smooth. Next, let the mixture boil on top of the stove for 8-10 minutes, and gradually mix in some sugar. When the mixture is done boiling for 8-10 minutes, let it sit for a couple of minutes to it is safe to pour into bowl molds. Pour the pudding equally into 16 pudding cups and let it rest in the refrigerator for a total of 2 hours. The next dessert I have for you is a strawberry-lemonade layered cake. It takes about 4 hours and 30 minutes to make, and makes 12 servings. To make the cake base, it involves butter, sugar, eggs, flour, baking powder, salt, milk, lemon zest, lemon juice, and strawberry jam. First, you want to have a 1:1 ratio of lemonade cake layers, to strawberry cake layers. To make the base, add all of the dry ingredients to the mixing bowl first and add the wet ingredients that do not include either the lemons or the strawberry to the base. Add the lemons to 1 batch of mix, and strawberry’s to the other batch. Next, bake the cakes at 350 degrees Fahrenheit for 16-20 minutes and let them cool for 10 minutes when they are out of the oven. After they have cooled, layer the cake and add frosting, if you choose, all around the cake. Finally, the last dessert I have is Salted Chocolate Matzo Toffee. It takes about 1 hour and 25 minutes to make, and yields 36 servings. To make the toffee, it is a simple recipe that only involves: butter, matzos, sugar, chocolate chips, pecans, and salt. First lay put the matzos and pecans onto an oven sheet and toast them at 350 degrees Fahrenheit in the oven until the level of toastyness is achieved. Next, boil the rest of the ingredients over the stove for 3 minutes and pour it over the toasted nuts when done. Let it sit for 1 minute, pour chocolate chips over it, and after another minute, sprinkle sugar over the toffee. Let it sit for 30 minutes at room temperature, or until the toffee is hardened, and break it by hitting it, or by cutting it with a knife.
